This has been a long standing debate. As far as I'm concerned, he's listed in both the film credits as "Satipo," as well as in the 1981 Illustrated Screenplay.
Now, Satipo is actually a small city in Peru, and given that Indy's two guides are Peruvian (one assumes since the film opens in Peru), more likely than not, his name is Satipo.
The debate had been whether or not Indy actually says "Adios, Stupido," but you know what? I think it's just a case of Harrison Ford mispronouncing Satipo, so that it sounds a little garbled, and no one on set caught it at the time.
Just my theory, but I think enough evidence is there to suggest that his name is Satipo.
BTW-> I could be mistaken, but isn't Sapito is a type of tropical fish.
