The scales are the sides of the handle of the knife, the decorative part that covers up the ugly mechanics of the knife. They also serve to widen the handle, otherwise the knife would be very thin and uncomfortable to use. Also, we've been calling them stag scales, but when I did some comparing to other knives, I realized the scales are made of jigged bone, in a dark brown color. Puma and Boker do make very similar knives but the bolsters (the silver ends) are not the right shape.
