Gobler use that phrase talking to Belloq, who didn't seem to know German. Maybe the books say he did, but the movie makes no indication of this.

However, although he may know English, Gobler IS German, and would therefore speak German to his commanding officer and to himself...although I don't see scheisse as any great German phrase. It was the first I learned.
