I've seen "The Saga Begins" a quite few times (I taped the video) and I think it is really funny. The best line is:

"And The Jedi I Admire Most,
Met Up with Darth Maul and now he's toast
Well I'm still here and he's a ghost
I guess I'll train this boy"

I also thought the "Indiana Jones" parody in UHF was funny (I thought the movie, as a whole, was pretty funny too).
