Sounds like the demo is setup using options that your video card doesn't have. I got the demo to work fine on my Pentium 166 (non-mmx), ATI Rage II graphics card (this is a horrible card) with the following settings:
NOTE: I don't have the game in front of me now, so I'm trying to do this by memory)
Click on Options,
Click on Display Options
Set the resolution to 512x480 (I think that was the resolution)
Click on Advanced Settings
Turn off Fog
Set the Card to Average Speed
(Here's where my memory gets really fuzzy)
The option furthest to the right shoud have two choices, pick
the first one (something about a double buffer?)
The Option all the way to the Right has three choices, pick the
first one (None I think)

This will set Infernal Machine to its lowest Grapical setting. Start the game with these settings. Of the game works, great, play it, or head back and turn on some of the other options, one by one, until you are satisfied.

Otherwise, you may be out of luck.
