Well, Jonny, the answer to your question is a complex one. I'll try and answer as best I can.

First of all, Indy is the kind of immortal hero that people still look up to. Like Robin Hood, Zorro, James Bond, and all those types, he fits a certain pattern of heroism that just refuses to die. Indy is essentially ageless. He is inherently good: righting wrongs, performing deeds of derring-do (old term there) to rescue the pretty girl and save the rest of the world from the clutches of evil. He is intelligent and scholarly, but more so he is streetwise and knows the language of the common man and can relate to him.

Then we get to the movies themselves. The now recognizable Williams theme that resonates throughout the whole soundtrack of all three movies moves right along with the action, keeping everything in place. The music is real and natural, not at all synthetic, and gets the adrenaline flowing. The action setpices seem completely natural, as do the relations, and not at all formulamatic or gratuitous. The damsels in distress are all real: Marion is tough and cynical after a lifetime of travel and heartbreaking experiences, Willie, the city girl, is weak and sheltered, always screaming yet intruiged by this tough guy who seems to be able to handle all this, and Elsa is a scholoar who has seen alot and knows the best way to handle situations. The movies themselves are just plain good movies. They are fun to watch, have a good feeling behind them, and combine certain elements that just make these movies great. Which is why certain movies stand the test of time while others don't. (think about it. People raved about the greatness of Titanic, but when was the last time you heard anyone STILL talking about it?)
The movies also follow a pattern that has lived for hundreds of years: the Shakespearean format. Think about it: Indy in all three movies finds what he's looking for somewhere in the middle of the film, during which it is revealed that several evil wrongs have been commited in the time. We then have a gathering of forces (physical or psychological)to right the wrongs committed, and at the denoument, we have the righting of the wrongs, in which lots of people usually die.

Of course, to save breath and face, let's just say this:
Indiana Jones movies good movies. That's why they cool.
