I think "Trust me" didn't catch on because it's too short and too generic. "May the Force be with you" is tailor-made for repeating to people and everyone gets where it came from. It's like "Live long and prosper."
But the best catchphrases are the ones that just come out of left-field. I mean, who knew that "I'll be back" would catch on? or "Life is like a box of chocolates?"

For me the coolest quote from "Raiders" is "C'mon, show a little backbone, will ya." I still use that one on my brother all the time.
