The character of IJ was originally envisioned as a smooth talking playboy (with all the connotations of being able to "schmooze and booze") when he wasn't galavanting around the world in search of antiquities. It was toned down because Lucas/Spielberg went after a segment of the audience that the Old Hollywood rarely targeted - teenagers. This was the marketing genius Harrison Ford credits Lucas with for the success of the Star Wars trilogy in his biography. This toning down also applied to Marion's story of having to resort to prostitution to come up with money to buy the bar and get back to the America. That part of the origiinal screenplay never made it to the big screen.

: Still, you can get a taste (no pun intended) of IJ's ability to handle his liquor from the scenes where he asks Marion for whisky bottle in the Tibetan bar fight, the scene where he drowns his sorrows in Cairo after Marion's seeming death, and in the opening scenes of ToD where he dashingly sips champagne in a white tuxedo. -CP

We first saw Indy with the bottle of the grape in his rooms when he offered a glass to Marcus, and finished his own of wine in Raiders, after Marcus obtained permission from the government for Indy to find the Ark. Regards. Michaelson
