Now I can't answer those first questions, but as for the minecart chase... at the end, the opening of the Ark was supposed to spew fire all over the place, or something like that, igniting a series of explosions when the Nazi ammo was ignited. Indy and Marion then load the Ark into a minecart and hightail it out of there, just ahead of those pesky explosions and with Nazis in chase.
