The smoking wouldn't have advanced the plot or characterization anyways, so why not leave it out? Besides, contrary to popular belief, not EVERYONE smoked in those days! :) (nm)

It just would've ruined the way I see Indy now, that's all. I respect him too much, and for him to smoke would have been devastating to me.
