Today on Cinescape, there was a report on why Lucasfilm hasn't worked on releasing DVDs yet. It said that they are hard at work on Star Wars: Episode 2 and thus, do not have time to work on them yet.
Note: The article on Cinescape explained about the Star Wars DVDs, but I think it accurately portrays the status on Indy DVDs as well.
