OK here goes to answer all those questions on whether or not Indy would be immortal because he drank from the Grail.

The answer my friends can be found in the Last Crusade novel.
The answer is NO. Sorry.

If you pay attention to the conversation between Indy and the Knight you will understand.

The Knight basicly tells Indy that to remain young and immortal you have to drink from the Grail everyday. This also explains why the knight looks so old. He says that at times his faith in God and his mission of guarding the Grail would fail. This would cause him to feel unworthy and he would not drink from the Grail until he felt worthy again. It was during these times of shaken faith that the knight would age.

Because the Grail cannot pass the Great Seal and Indy has no desire to live forever in the cave he would age normally even if the Grail had not been lost.
Another question I've seen a few timesis does the Grail Knight die and the answer is yes he would finally die and that is what he wanted for he greets Indy with relief that another had finally come to kill him in single combat thus allowing him to finally travel to his Great Reward.

Just trying to help
