Speaking from The Old Continent ;), I think that the film makers didn't really think about this scene. Things were just supposed to burn there, so they did. :) *If* it symbolized anything at all, then it could be, for instance, the fact that the Nazis' ruthlessness and cruelty would leave nothing highly important, sacred, etc. untouched, and that they would literally destroy everything to get what they wanted... etc... but I really think that looking for any hidden meaning in the scene is an overinterpretation. :o)
