Here's what I think "Last Crusade" means.
1. Yes, I agree that it meant the last film of the saga.
2. I also agree with the Knights interpretation.
3. I think that it was the Last of the 8 Crusades, led by Richard the Lionheart in a quest to reclaim the holy land from the Muslims. Only the people involved are just figure heads. The Holy Grail represents the Holy land. Richard the Lionheart is represented by Henry Jones Sr. His knights are represented by Sallah, Brody, and, our hero, Indiana Jones. The Muslim Turks taking the Holy Land (Grail) are represented by the "slime of humanity": The NAZIS.
That's my opinion.
