It depends a lot on the lighting (color temperature) how a color looks on film. That means if you take a picture early in the morninig or in the evening, colors will look warmer (more red) than at noon (more blue).

If you now imagine that Indy's pants have just a bit of a red hue in them, all to bring that really out is warm lighting. Movie lights have nearly always gels (filters) attached to balance the color. This explains why it is nearly impossible to determine the exact color Indy's clothes and the hat!
