As a "horse person" I would guess that the horses were mostly quarter horse. I'm basing this on the fact that they were very muscular, but not huge or lanky, like thoroughbreds or warmbloods.
There is, of course, a good chance that the horses were of mixed breeding, but I'd bet there's some quarter horse in there.
Also something to take into consideration is that the films were shot on location, so local breeds might have been used. In that case there might be some Arabian or Barb influence. I see Barb, perhaps, but not much Arabian, at least in Last Crusade.
The white horse in Raiders...he might have had some Arabian.
I think I've talked too much, and I'm probably all wrong. But this topic certainly interested me.
