Try David Hurst Thomas' book "Archaeology: Down to Earth", too.
Basically many good introductory texts from recent years should have the info you're after. The Bruce Trigger book (History of Archaeological Thought) is more of a history of theories and key players, and somewhat dense for the beginner, but give it a go.
"Archaeology" magazine is ok, but somewhat limited.
Best thing to do, if you're just getting into this, is to go to the Society For American Archaeology website (www.saa.org); it's full of basic info and links to answers to the kind of questions you're asking.
