I'm not sure if this is a good enough answer for you, but according
to 'Indiana Jones and the Peril At Delphi', the first novel in the
LucasFilm endorsed Bantam series by Rob MacGregor: The contents of
Indy's pouch are his journal, small excavation tools
such as brushes and tiny picks, and a compact first aid kit. This of
course is as of 1922, when the story takes place. As far as I'm
concerned there could be anything in his bag from time to time, such
as an ominous glowing gold light, property of Marsellus Wallace.
