Ski Jump Analogy....

I reckon the best way that I can think of to describe the back of Indy's hat in 'Raiders' is to call it a ski jump look. You can see it pretty well in Marion's bar. The back slants down(about as much as the front) but at the very end it curves back up, kinda like a ski jump. A long downward slant ending with a lip(or curl) that slants back up.
