The Making of TOD was a show I think aired on PBS when TOD came out. It was never put to tape. Great Adventurers and their Quests: The Making of Indiana Jones and the Last Crusade was put to tape but has since gone out of print. You can pick a copy up on ebay from time to time, on VHS or Laserdisc, although the Laserdisc copy is much harder to find.
