If we are talking about the Old School Indy from the 1930's & 40's he would have a Military Issue Omega in Stainless Steel. Something rugged enough for his adventures yet stylish enough for class.

Indy alive & working today would have 2 watches (as it is more expected today to have multiples). I agree with the Rolex GMT Master in all stainless for adventuring but daily wear would be a nice Rose Gold IWC, perhaps a vintage piece passed along from a colleague. If he had to choose just one for modern use it would definitely be an Omega Triple Date chronograph; similar to the Moon Watch but with more complications.
