I wear a 7 1/4 as well. Give Joe these specs. Open crown height 5 3/4. Height of front pinch 4 5/8. Height at sides after bash, 5 1/4. Brim cut to 2 3/4 x 2 5/8. Tell him to copy the hat from the streets or Cairo, as he probably has numerous pics that have been sent to him. I think thse specs will give you what you are after, but you may have to do a little tweeking to get the squared off look of the crown. That's easy to do, and I can walk you through it.
