I always liked that look on the "Temple" jacket as well. So with my lambskin Wested I would sometimes slide the sleeves up past my elbow as far as they'd go, then rub the hell outta the leather. When I slid the sleeves back down they had those cool-lookin' creases. I reckon it'd work on cowhide as well. You may even wanna slide the sleeves up for long periods of time to make sure the creases take.
