There is a gameplay difference in that they have made a better attempt at smoothing over some of the animation chop as well as improving his reaction time. However, he is still rather slow and clunky. What can you expect from a three year old graphics engine? This thing was made for Jedi Knight, a 1st person shooter!

Lucasarts was cutting some corners is what it boils down to.

Also, the graphics have slightly less contrast and slightly lower res.
