Brandon - all I can recall is that the truck chase was filmed in the same general location as the R2D2/Jawa sequence in Star Wars. This is now clearly labelled "Star Wars Canyon" and any local tourist-y place can tell you where it is.

If you have access to old issues of the Star Wars Insider, there was an article a few years back by Dr. David West Reynolds, who sought out several Star Wars locations in Tunisia. The article mentioned a few of the locations you are looking for. If you can't find them, let me know, and I'll dig out my old copies and post them for you.

You could also try searching the net for these locations.
