I don't think it will be the last Indy movie- although I have a feeling it might be the last with Harrison Ford. George Lucas and Spielberg never seem to let a good thing die, and they also love trilogies, sequals, etc. I think that they might incorporate a character into the film somehow that will be able to continue the legacy. By the time they make another, Ford may be a bit too old, but not for a father figure, or something along those lines, mentor or whatever.
