All good questions... I am by no means a religious expert (I don't even believe in God) but I would have to say that they just wanted to make it look cool. After all, when people think archaeology, they think Egypt (mostly), and maybe they just wanted something the viewers could identify with even if it wasn't acurate. Then again, maybe there is a deeper meaning to it, who knows...

Also, those hebrews at the beginning were the worst spear throwing dart gun blowing tribe I have ever see! Watch one particular scene where Indy is running down the hill and the one dude stops to throw a spear, he throws it WAAAAAAYYYY up into the trees... Thats the funniest movie moment I know of.
