leather durability?

I am having Wested make an Indy jacket for me. Which of the leathers that they offer is the most durable? Which is the next in line? and after that? Does anybody have any comments, good or bad, about the predistressed cowhide? Or would I be better off getting a new finish and letting it age naturally from wearing it.
