The Thing (actually, it's a VW 181/182 and not a VW 166 as wrongly stated) was created as a light reconnaissance vehicle for the German Army. It was made from about 1969 till 1980. 30,000 were made for the US market between 1973 and 1974.
As far as Beetle parts go, I see beetle headlights and tail-lights (Super Bug/1303) on the outside. The Thing has an indestructable, aircooled 44 hp Beetle engine, and it sure sounds like a Beetle boxer engine, since most Things have the same exhaust system as the Beetle. Transmission, clutch, steering and tank were also lifted from the Beetle.
One big difference betwen the Kübelwagen (Designed by Ferdinand Porsche) and the 181 is the front of the car. The Kübelwagen had the spare on the hood, the 181 has it under it.
Even Mexico produced VW 181s. They were marketed as VW Acapulco and VW Beach (Let's not remember Nazis and Hiter), "funcars."

What you really want is this newer version of a Kübelwagen: The VW Iltis (Polecat), some which can actually float. The Iltis is available with a turbo diesel engine. The Canadian armed forces use the Iltis, and it was used in Desert Storm.
