Actually, the Mc Guffin is the idol, the Ark, the Sankara stones, Jones Sr.
Raiders is about the chase, ToD is nothing but a chase from beginning to end, and Last Crusade is another chase. None of those three films made me say "Wow, archaeology is one hell of a profession."
If Indy films were about archaeology, then we would watch Indy read books, search the archives, and occasionally clean baked-on dirt from arctifacts. We would also walk away with better understanding of other cultures and more knowledge. But we don't.
It's all in fun and great entertainment, but the Indy movies are as much about archaeology as James Bond movies are about espionage.

: With Indy being in the 50's, He'd probably be looking for the missing pieces to the "balloon" that crashed at Roswell, New Mexico in 1947. Then the movie would end in one of those "Oh!" moments, where we find that the pieces of wreckage and the "little green men" are actually locked in the same warehouse that houses the Ark, but in the long run, we'd realize that the movie would have NOTHING to do with Archeology.
