Maybe it's not that he didn't know Indy's full name, perhaps it's that he didn't know HENRY's name. It's my belief that all they told Sallah was "Indy's father", hence, "Father of Indy" in the polite way that Sallah speaks. This might be why at the end of the movie, during the "Henry Jones, Junior" line, Henry points to himself as he says the first part of the name.

: I definitely think Sallah did not know Indy's full name, especially in light of the very end of the movie when he finally asks Henry Sr. what 'junior' means and then seems incredulous that Indy took the family dog's name.
