Actually, that's funny - I watched Raiders last night and for once truly appreciated it on a technical level. The editing of the film is so...there's no better word than manipulative (from Spielberg? Nah!) It rises and falls and the right moments, and in my opinion, is the best edited film of the trilogy. If a "Special Edition" cut of Raiders was ever released with excised footage restored, I'd imagine it just as intrusive as the Special Edition of Star Wars seemed to me. However, I'm a fan of lost footage so it'd be cool to see them on a laserdisc/DVD sometime in the future as an added bonus.
As for the Cairo Swordsman scene - have you seen the Making of Raiders recently? There's sort of a snippet of the scene with Indy grappling with the guy, kind of nice to know that being the trooper Harrison Ford is he tried it despite his...intestinal troubles!
