Indy's name change and stuff

Don't recall seeing it in the Young Indy Chronicles, and the video which explains it (Chapter 7) is not released yet... How did Indy end up being called DeFonse? (And why?!) I assume it was because he lied about his age et al, but why that name?

And as for Paul Freeman playing the leader of the old and the bold in Phantom Train - isn't the English General in that episode the Nazi leader from LC? There are too many actors cropping up as different characters in this series!!!
