Course, I'm just speculating here but I get the impression that Sallah has his finger on the pulse of everything that goes on in Cairo. The explosion of the truck would be big news in the neighborhood so it doesn't strike me as odd at all that Sallah would've heard about it. As far as why he would know about Marion supposedly being in the truck I can only guess that the Nazis fed that rumour to keep Indy off balance.
When Indy talks to Belloq in the bar, Belloq knows that Marion is alive and is imprisoned in the tent at the dig site but he lets Indy believe that she is dead.
