I always figured the beard came from the fact that most archeologists dont shave while on a dig. Correct me if Im wrong, but I remember a show talking about the real mummy's curse. The archeologist studying the site shaved often as proper gentlemen do. However he also gave himself a nasty cut, which became quickly infected from things (organisms? bacteria?) released from the centuries sealed tomb. He ended up getting sick and dying hence the mummy's curse legend started

: For all Indy gear collectors, this is probably the easiest part of their outfit to assemble -- just toss out your razor. I also think that Indy's scruffy beard doesn't get enough credit for making the character an icon.
: Think about it: Most movies you see, the hero is usually suspiciously clean and well-groomed. What a stroke to make Indy a bit disheveled! It improves to authenticity 10 fold.
: I really think that, apart from his fedora, Indy's three-day beard is what made him so appealing. In honor of that, I make sure to shave just once a week.
