A deliberate change by the Indy to call him little sap is a good guess. A bit presumptuous, but it's good. It may also, if true, point to an even bigger mystery.

From a story perspective, having Indy change Satipo's name to the word for little sap would only really make sense if the audience already knew what he's name was supposed to be (and, they understood spanish -- an argument that this mystery is not true). Which may imply that he says his name correctly, which inturn implies that something was cut out of the film.

Also, as far as the Illustrated Screenplay, most of the "consumer" versions of screen plays are really just transcripts of the finished movie and not the actual script that was used during filming.
