Definitley Lamb. Check IndyGear FAQ. This has never been in dispute.
My lambskin wested is very distressed, with lots of creases. It just takes a lot of time and patiance. I used very fine sandpaper and really took my time. I also took a roll off my mountain bike one time that did wonders, but I would not recommend that. MK has a method with acetone that I was not willing to try, but looks like it works well.
